The Pajarito Brewpub and Grill opened its doors for business on November 2, 2012. The “Pub”, as the locals call it, will celebrate their 10th anniversary on Wednesday, Nov. 2, from 2:00-4:00 P.M. at 614 Trinity Drive with a Chamber of Commerce Ribbon Cutting at 4:00 P.M.
The Pajarito Brewpub and Grill was the vision of Patrick Mockler-Wood. Having grown up in Los Alamos, he was looking for gathering space for the community to enjoy tasty food, drinks, and fun times. At a time when most businesses in town were closing their doors, Patrick saw an opportunity.
With the help of his mother Catherine, his family, friends, and some partners (Pawel and Dorota Listwan from 2012-2017), they built the Pajarito Brewpub and Grill out of a former Blockbuster Video store. From the ground up, he and his team took great care in the construction of every inch of his taproom. Inspired by the surrounding Jemez Mountains, he worked to blend the rustic and rugged outdoors with a clean, modern edge.
In 2012, breweries were not permitted in downtown Los Alamos due to local zoning laws, so he chose the next best thing, a taproom. He installed a 35’-long keg cooler and thirty craft brews on tap. Patrick decided that wasn’t enough and added fifty-four types of bottled beers and four types of wine on tap. He then started collecting whiskeys, bourbons, and scotches, with more than 100 now available.
The Pub has featured over 600 different beers on-tap over the years. Customers can see some of the tap handles that have frequented the taproom mounted over the entryway door and windows.
“Many great chefs have collaborated with Pajarito Brewpub over the years to create tasty food to go with the eclectic and everchanging beer, wine, and spirits,” said Mockler-Wood. “Pajarito Brewpub and Grill has a decade of stories and is just getting started!”
The Pub would like to thank the Mockler Family, the Wood Family, the Blumenthal Family, the Listwan Family, Laura Crucet, Doug Osborn and the Bathtub Row Co-Op, Josh & Kim Montoya, Justen Ramsey, Dale Opperman, all the local small businesses, two staff members of 10 years: Blanca and Aaron, and all the great staff over the years!
