They have multiple varieties that can be baked, roasted, mashed, pureed or even carved. Ask the Co-Op produce staff to introduce you a squash you have never tried before. There are lots of good sources online for recipes and winter squash is so easy to store because of its thick skin. The Market is located at 95 Entrada Drive, just minutes from downtown Los Alamos.
